Ejaculation starts thick, then goes to watery.? -
In the past few months, I-ve noticed my ejaculation go from mainly just thick, to starting thick then at the end it goes watery...
Is this normal? Or sign that I may be infected with something?

You are normal, my friend...
when you ejaculate first time the semen is thick, then after few minutes or an hour if you ejaculte it is less whitish amd more watery.
because you have ejaculated a huge amount at the first time, so only the remaining few of the semen comes and hence more watery and less thick.

How often are you ejaculating?
The more frequent the ejaculation, the less time your body has to produce semen, therefore a thinner load is produced.
Such other aspects such as stress and diet can play a role.
However, different thickness of semen are common among people. Many people range from how thick, how white, how transparent, and it is common. There is mostly never an issue with these when it comes to semen. The only real problem is when blood emerges within the semen, so you should be fine.

When you say your ejaculation starts off thick and then becomes watery, are you talking about one ejaculation session, or are you comparing two different ejaculation sessions where the first is thicker than the second?
However, i assure you that there is not a problem. Taking a general look at men and their semen, every man has different consistencies of semen. Some men have thicker semen, while others have thinner or watery semen. Some have whiter semen, while others have more transparent semen. Taking a closer look at your identified problem, i-ll greatly note that it is also very common for different consistencies to occur within one person. It is perfectly natural for one person to ejaculate thick semen, than over time have thinner semen, or vice versa.
Semen is very inconsistent, but rarely does it represent fertility. Many believe that thicker and whiter semen represent greater fertility, which is why many prefer this consistency. Being more fertile is more appealing to males and females, most likely from human nature. But it is not true that whiter and thicker semen represents greater fertility. There is actually no true standard of how white or thick normal ejaculation should be, either. The only way to surely assure fertility is to have a sample tested.
Taking a look at extremes, the only symptom of illness that is seen within semen makeup that i have been informed of is retrograde ejaculation. This is when the semen is backed up into the bladder. I highly doubt you have this and am very hesitant in informing you of this, incase you may now believe you have this. But if you do have this, you-d be complaining about other issues due to the fact that retrograde ejaculation is usually caused by prostate problems and is seen within the elder. This is also caused by medication used to relax the urinary tract. This is uncommon for you and is usually only found in elderly men treated for prostate problems.
What truly influenced semen is your diet and fluid. Diet affects your semen, just like it affects your whole body. I-m sure you-ve heard such things as broccoli and meat causes your semen to taste worse, which is true. Fruits such as pineapple actually make your semen taste better, which is a resolution to an issue many females state. Fluid is very important since, after all, your semen is liquid. Exercise never hurts, either. Exercise will only improve all aspects of your body. Just know that there is no real problem, and that there is no real standard for how thick or white your semen should be. And also, it is common for your semen to change often over time.

100% normal! The consistency will change after a few minutes from thick to thin after you ejaculate.
